Ingredients
- 1 cup of Black Kavuni Rice Add to cart
- 1 ½ cups of jaggery
- 4 cups of water
- 1/2 cup of grated coconut
- 3 tablespoons of Ghee Add to cart

- 10-12 cashews
- 8-10 raisins
- A pinch of salt
Instructions
Step 1: Preparing the Rice
- Wash 1 cup of Black Kavuni Rice thoroughly and soak it in water for 3-4 hours. Soaking helps in cooking the rice faster and ensures a soft texture for the pongal.
Step 2: Cooking the Rice
- Drain the soaked rice and add it to a pressure cooker. Pour in 4 cups of water and cook for about 4-5 whistles or until the rice is soft and well-cooked. The kavuni arisi pongal should have a slightly sticky consistency.
Step 3: Melting the Jaggery
- In a separate pan, dissolve 1 ½ cups of jaggery in a bit of water over medium heat. Stir continuously until the jaggery is completely melted. Strain the syrup to remove impurities and set it aside.

- Once the rice is cooked, mash it slightly using a ladle. Pour the jaggery syrup into the rice and mix well. Cook on low heat, stirring continuously until the jaggery is fully absorbed into the karuppu kavuni pongal.

- Add ½ cup of grated coconut, ¼ teaspoon of cardamom powder, and a pinch of salt to the pongal. Mix everything and cook for another 5-7 minutes on low heat.

- In a small pan, heat three tablespoons of ghee. Add cashews and raisins, and fry them until golden brown. Pour this tempering over the pongal and give it a final stir.
